- 1 ½ cups matchstick-sized strips peeled jicama (or zucchinis if jicama is not available)
- ¼ cup extra virgin olive oil
- 3 tablespoons fresh limejuice
- 5-ounce package mixed greens
Sea salt and freshly ground black pepper to taste
1 large avocado, peeled, pitted, sliced
5 oz. package soft fresh goat cheese.
Toss first 4 ingredients in a large bowl. Sprinkle with salt and pepper.
