Avocado-Goat Cheese Salad with Lime Dressing (From: The Plan)

Yield: 4 servings 

  • 1 ½ cups matchstick-sized strips peeled jicama (or zucchinis if jicama is not available)
  • ¼ cup extra virgin olive oil
  • 3 tablespoons fresh limejuice
  • 5-ounce package mixed greens

Sea salt and freshly ground black pepper to taste

1 large avocado, peeled, pitted, sliced

5 oz. package soft fresh goat cheese.

Toss first 4 ingredients in a large bowl. Sprinkle with salt and pepper.
